Ikanago is sand eel which is boiled down in soy sauce and has a slightly sweet taste. It is served as a side dish or over rice. The brown colour comes from the sweet rice wine and ginger based sauce in which the sand lances are cooked.
This cuisine is definitely unforgettable! Being back in LA, I definitely miss this dish the most! I haven't found a restaurant in America that can replicate this cuisine taste sadly.
I recommend going to Dotobori Street because they have the best service and it was a great experience there!
